Appearance: Fine bubbles which rise slowly, persistent mousse. Straw-colored. Aroma: A nose of ripe pear with some touches of cut hay. Taste: Full fruit, but clean in the mouth.Composition: This cuvée contains 40 percent Pinot Meunier, 30 percent Pinot Noir, 30 percent Chardonnay. All wines from the best sites in the department of the Marne, from more than twenty top vineyards in Champagne. The overall composition of this cuvée has not changed much for almost fifty years.
Winery
Founded in 1818 by Nicolas François Billecart and his spouse Elizabeth Salmon in Mareuil-sur-Ay, this is one of the few houses that have remained in the same family. Seven generations on, the house is led by the very talented Francois Roland-Billecart. They espouse three principal aims: “finesse, balance and elegance” and the complete range of wines is testament to this.
