Food Paring
Braised Lamb Shoulder, Foie Gras with Truffles

Tasting Tips
Polished and pure, with delicious layers of plum sauce, braised fig and melted licorice that glide through the dense but silky-textured finish. Hints of graphite and incense lurk in the background. Long, with buried minerality. Should age nicely. Grenache, Mourvèdre and Clairette. Drink now through 2015.

Winery
The estate takes its name from the lieu-dit of Les Pallières. Most of its vines, and the cellar and residential buildings, have been there for well over a century. But the single, 333-acre plot that forms the estate overlaps some way into neighbouring lieux-dits such as Thomas, Poncet, Terrasse du Diable and Pas de Vège: these all back onto the northern end of the Dentelles de Montmirail cliffs, face northwest and are very similar in composition.
