The grapes were hand picked at optimum ripeness (14.2 Be) and quickly crushed. The wine was fermented on skins for 5 days and then pressed out. The wine was transferred straight to oak barrels where malolactic fermentation was carried out. The wine spent a further 8 months in oak. The wine show lovely black cherry characters with soft tannins and great length.
