Our grapes were crushed and pumped into open fermenters and inoculated with selected yeast strains. Ferments were plunged 3-4 times daily to gently extract colour and flavour. At the end of fermentation, the resulting wine was pressed and transferred to French oak barriques. After one racking during the year, the wine was blended, given a light fining and filtered ready for bottling.

With an earthy and quintessential cabernet nose, the aroma comprises hints of blackberry, tobacco leaves and cassis, while the palate is structured and elegant displaying tight, fine tannins. Production is limited to around 250 cases or 10 barriques.
2006 provided ideal conditions for excellent fruit production, delivering low to medium yields, and produced wines displaying warm and well-balanced fruit characters. Minimal intervention was key in the production of this complex, layered style of cabernet. 50 of fermentation was performed in open top concrete tanks while the other 50 was fermented in static tanks before spending 18 months in French barriques. A light egg white fining was performed prior to bottling.

Our humble vineyard began its life with the planting of Semillon in 1963. The block has lived with many names before we settled on the rather boring and unimaginative ''SEM A''. The vineyard was originally planted as 13 acres, however in 2009 we have reduced it down to 5 acres keeping the best ''old vines'' fruit for the future. Learning by bitter experience, Semillon has a real thirst for water during periods of hot weather. Most of the original Semillon block was unirrigated so over the years has suffered terribly during the hot Hunter Valley summers. Not surprisingly the healthiest vines were found in the irrigated sections, so those make up part of the remaining acres, and we have added extra irrigation so all 5 acres receive vital water. The rows are planted following the natural hillside, which lends itself beautifully to a north/south orientation, which gets maximum sunlight exposure to the canopy.

The colour is dense, dark and crimson. The nose is intense and crisp there is loads of latent fruit power here. Wonderful crushed berries jump from the glass surrounded by nutmeg and cinnamon, before intense black berries, super ripe raspberries and plummy fruits take over, I could sniff this thing all day! The palate is all texture being thick and sexy. Its lush, opulent, flamboyant and loaded with fruits, squashed plums, hints of liquorice and those super ripe rasberries again, the oak taking a back seat, absolutely delicious. This wine is mid plum in colour. The nose shows dark cherry fruit combined with spice and mocha oak. The palate and full flavoured and shows good varietal definition, which is enhanced with spicy oak characters. The grape and oak tannins add power to the palate that will ensure medium term cellaring. The wine finishes with a good persistence of flavour and good acidity.
The early part of the 2005/2006 growing season was warm to hot but this changed quickly in mid March to being very cool and showery. This weather persisted for the balance of the ripening period. The resulted was extended ripening with good flavour development but slightly lower acidy than normal. The fruit was hand picked between the 1st and 24th April.

Char grilled medium to rare fillet steak
Aroma: This is a magic Cabernet nose: ripe mulberry fruit with some leafy hints, but no trace of greenness. Quite classic. Palate:The palate weight is lighter than you expect. The flavours are quite subtle,showing restrained Cabernet berry fruits and gentle oak influences. Fresh acidity makes the finish bright, held up by fine chalky tannins. A very good example of Peel Cabernet destined to develop classic Bordeaux characters as this line does in lighter years. The wine has a long way to go, even though itâs delicious now.
Peel Estate prides itself on growing premium quality fruit and 2003 vintage was no different. Fruit was crushed immediately after hand picking in late March. Open fermentation on the skins for at least 5 days occurs before pressing, for best development of colour and tannin. For 18 months, half of this wine was matured in new French Oak barrels and the other half in 2nd use French Oak barrels. Sour granny smith apple, zesty lime/citrus, and a slightly grassy/vegetal element mark the flavor of this wine, which has a gush of tart acidity and a crystal clean finish. Actually the finish is reminiscent of Gatorade gum: limey citrus flavor with a chalky, thirst quenching tartness. Alcohol is mild, hardly noticeable, yet the wine has surprising body for a light white.
Basa Ruedaâs winemaker is Telmo Rodriguez, considered by many wine experts to be Spainâs up-and-coming enologist. A few things make him special, notably his dedication to preserving the terroir in wines and believing that winemaking begins in the vineyard. As a result, he chooses indigenous grapes from old vines that produce extremely low yields. This estate grown Chardonnay is handpicked and whole bunch pressed resulting in the most pristine, high quality juice. The juice is barrel fermented in a mixture of new and second-use French oak barriques. At Bress we use Biodynamic farming practices, Biodynamic farming was developed in the mid 1920's by Rudolph Steiner and advocates the non use of synthetic herbicides, pesticides and fertilizers. Blue cheese,
A smooth, exotic nose of plum, dark cherry, star anise, rosella, cinnamon, clove and nutmeg with a hint of spirit in the background. The palate is open with Class A, Export Quality tannins, providing a luxurious mouth feel. Some mild sweetness and some acid to back it all up.
