The grapes were hand picked at optimum ripeness (14.2 Be) and quickly crushed. The wine was fermented on skins for 5 days and then pressed out. The wine was transferred straight to oak barrels where malolactic fermentation was carried out. The wine spent a further 8 months in oak. The wine show lovely black cherry characters with soft tannins and great length.

Its lush, opulent, flamboyant and loaded with fruits, squashed plums, hints of liquorice and those super ripe rasberries again, the oak taking a back seat, absolutely delicious. The wine is vibrant and youthful but very approachable with lifted red fruits of raspberry and mulberry on the nose and soft plums, cloves and vanilla on the entry palate. The fleshy middle and end palate gives more succulent mulberry and sweet red fruits with dusty tannins. The style is softer with cellaring for the medium term and earlier drinking in mind. Balanced and fully approachable on release it will hold for 5 ïżœ 8 years.
The winemaking uses warmer ferments in traditional open fermenters with hand ïżœpiage??? 4 times each day to soften the palae, and the use of older barels to impart less oak dominance.

God''s Hill Road is almost 2km long, and runs along a small hill range to the west of Lyndoch Valley. Along this short stretch of dirt road are some wonderful Shiraz vineyards growing on a great collection of soil types. The Shiraz (38%), and Merlot (33%) provide the ripe sweet fruit palate while the Cabernet Sauvignon (29%) gives structure and tannin support. After years in the bottle the older "WillowBend" blends have also shown great complex characters while still maintaining their fresh fruit flavours. WillowBend is typically a very good wine to drink now, but will also benefit further by lying it down for a few years to complex with extra bottle aging.

This wine has loads of sweet berry fruit aromas; boysenberries and blackberries with some plum fruit characters as well. Minimal intervention was key in the production of this complex, layered style of cabernet. 50 of fermentation was performed in open top concrete tanks while the other 50 was fermented in static tanks before spending 18 months in French barriques. A light egg white fining was performed prior to bottling.

This wine is mid plum in colour. The nose shows dark cherry fruit combined with spice and mocha oak. The palate and full flavoured and shows good varietal definition, which is enhanced with spicy oak characters. The grape and oak tannins add power to the palate that will ensure medium term cellaring. The wine finishes with a good persistence of flavour and good acidity.
The early part of the 2005/2006 growing season was warm to hot but this changed quickly in mid March to being very cool and showery. This weather persisted for the balance of the ripening period. The resulted was extended ripening with good flavour development but slightly lower acidy than normal. The fruit was hand picked between the 1st and 24th April.

Winemaking: Hand harvested at an average of 24 Brix the fruit was chilled, destemmed, cold soaked for twelve days prior to warming and fermentation in small open topped fermenters. At dryness the wine was drained and the skins gently pressed following which the components were matured in French oak barriques for 8 months before blending and bottling.

The cooler spring and early summer led to a slow start to the growing season, and unsettled weather in December affected flowering and fruit-set. Small clusters and berries were typical throughout the region, resulting in lower than expected yields. However, a warm and dry February and March promoted good ripening and clean, high quality fruit. The juice extraction rate was low, reflecting the smaller berry size/bunch weights.

Our Heathcote Block Two Shiraz is an intense powerful wine bursting with concentrated dark berry flavours and exotic spice. The ripe fruit and fine tannins make this an impressive drink.
Our grapes were crushed and pumped into both open and closed fermenters and inoculated with selected yeast strains. Some batches were co-fermented with Viognier to increase complexity. Ferments were plunged 3-4 times daily to gently extract colour and flavour. At the end of fermentation, the resulting wine was pressed and transferred to mostly French oak barriques, with a small percentage of older American hogsheads. After one racking during the year, the wine was blended, given a light egg-white fining and filtered ready for bottling.

Aroma: This is a magic Cabernet nose: ripe mulberry fruit with some leafy hints, but no trace of greenness. Quite classic. Palate:The palate weight is lighter than you expect. The flavours are quite subtle,showing restrained Cabernet berry fruits and gentle oak influences. Fresh acidity makes the finish bright, held up by fine chalky tannins. A very good example of Peel Cabernet destined to develop classic Bordeaux characters as this line does in lighter years. The wine has a long way to go, even though itâs delicious now.
Peel Estate prides itself on growing premium quality fruit and 2003 vintage was no different. Fruit was crushed immediately after hand picking in late March. Open fermentation on the skins for at least 5 days occurs before pressing, for best development of colour and tannin. For 18 months, half of this wine was matured in new French Oak barrels and the other half in 2nd use French Oak barrels. Itâs a light colour and indeed itâs a fairly light and delicate sort of Pinot. It opens with a bit of sauvage sausage, red fruits, undergrowth, light but positive French vanilla oak and offers a certain minty sort of perfume with a pinch of volatile lift. Again the palate is light and fresh but crisp and vibrant - expressive and insistent, although quietly so. Thereâs some gamy flavour, and a little marzipan, but on the whole itâs of a bright red fruited flavour profile. Tannins are light, but firm and dry and thereâs no shortage of length. Very good Pinot and likely to develop handsomely.

Situated to the south-east of Mallorca, AN Negra winery produces its wines on the old country estate of Son Burguera close to the town of Felanitx. The grapes were hand picked at optimum ripeness (13.2 Be) and transferred quickly to the winery, where they were crushed, gently pressed and the juice cold settled. Once the fermentation had started the must was transferred to oak barrels where the wine was fermented to dryness, some going through malolactic fermentation. The oak used was a mixture of new and 1 year old, with 66 French and the rest American. The wine stayed in oak for 10 months with regular lees stirring. The wine shows lovely citrus and melon flavours with the creaminess of malolactic fermentation. The oak is finely intergrated. This wine will age till 2008 with careful cellaring. Light straw with a green edge. The nose shows classic cool climate chardonnay perfume of citrus and melon overlayed with nutty oak. The palate is tightly structured leading to a long creamy finish. Barrel fermentation and maturation complements the fruit structure and adds depth and complexity to this wine. As there is no malo lactic fermentation there is plenty of acidity to give length and freshness to the finish.
The great thing about making wine from fruit grown in a cool region is that the fruit arrives at the winery at a nice low temperature. This naturally low fruit temperature allows us to whole bunch press our chardonnay. This results in very high quality juice with well-defined fruit flavours, low phenolic extraction and very low solids levels. After overnight settling the juice was racked into French oak barriques and a yeast culture was added. Following primary fermentation sulphur dioxide was added to the wine to prevent malo lactic fermentation.

Once again, this years Creel Semillon was made from grapes grown on the Majors Lane vineyard here in Lovedale. The 2008 vintage could be decribed as quite challenging. My love for great Aussie fortifieds has led me to produce something quite unique. A real Liqueur Shiraz! Shiraz grapes were left to hang and whither on the vine, shrivelling and concentrating the sugars and grape flavours. Harvested as raisins, crushed into small picking bins and then fortified with neutral grape spirit during the initial stages of ferment, we were able to trap and preserve the wonderfully intense characters of the super ripe Shiraz grape. Our 2007 bottling is thick and viscous, with plenty of rich flavours of raisins, black currant, liquorice, plums and a few other red berry fruits. Its lusciously sweet with plenty of warm alcohol.

Why mezzanotte, Italian for midnight? Rosato, rose', wines are made from red grapes with minimal & controlled contact with the skins. Traditionally, Old World winemakers would wake at dawn to begin picking at 8AM. By noon, the grapes had been crushed and the juice allowed to macerate, or to sit on the skins. Usually the juice for rosato would be drained off after 12 hours, or at midnight. Thus, rosato came to be referred to as vino della notte, wine of the night or midnight wine.

Pongråcz is made strictly according to the dictates of the Méthode Cap Classique, and is composed entirely of two noble grape varieties, Pinot Noir (60) and Chardonnay (40). It has a fine bead of pinpoint bubbles. The characteristic biscuit and yeastiness on the nose is followed by the rich complex full fruit giving it finesse and a lingering finish. It is a light straw colour with a greenish tint; it has good mousse and persistent bead.

On the nose it presents as quite Chardonnay driven with spicy and somewhat aldehydic characters and developed yeasty overtones. Its not until the palate that the firmness of Pinot Noir is felt, but in a quite restrained fashion, it still feels quite primary, even though its at the 10 year mark. The acid is soft which suggests that this won't be the longest lived wine, but it still tastes admirably youthful.
