"In the wake of a dry, grey and cold winter (albeit one with only rare frosts), budburst took place mid-April owing to a sharp rise in temperature. However May was marked by very low temperatures, although with no rainfall. Early June was hot and sunny. Capricious summer alternated between sizzling heat and rain at the end of August. Harvesting was set to start from 16th September to 1st October. The composition of the 1996 musts was absolutely exceptional. It was impossible to find identical analytical characteristics in past harvests, i.e. such richness in sugar and such strong total acidity. The characteristics of the 1996 wine offer a long cellaring potential." 1996 was an extraordinary vintage and this is the best of the best.

Apertif
On the nose it presents as quite Chardonnay driven with spicy and somewhat aldehydic characters and developed yeasty overtones. Its not until the palate that the firmness of Pinot Noir is felt, but in a quite restrained fashion, it still feels quite primary, even though its passed the 10 year mark. The acid is soft which suggests that this won''t be the longest lived wine, but it still tastes admirably youthful.

There are two Bartons in Bordeaux, Léoville and Langoa, and it is quite right to suppose that the two are related. Char grilled medium to rare fillet steak
Aroma: This is a magic Cabernet nose: ripe mulberry fruit with some leafy hints, but no trace of greenness. Quite classic. Palate:The palate weight is lighter than you expect. The flavours are quite subtle,showing restrained Cabernet berry fruits and gentle oak influences. Fresh acidity makes the finish bright, held up by fine chalky tannins. A very good example of Peel Cabernet destined to develop classic Bordeaux characters as this line does in lighter years. The wine has a long way to go, even though itâs delicious now.
Peel Estate prides itself on growing premium quality fruit and 2003 vintage was no different. Fruit was crushed immediately after hand picking in late March. Open fermentation on the skins for at least 5 days occurs before pressing, for best development of colour and tannin. For 18 months, half of this wine was matured in new French Oak barrels and the other half in 2nd use French Oak barrels. Before bottling less than 5 of Peel Estateâs premium Shiraz and Touriga was blended with the Cabernet to help create the lovely balance of fruit flavours and complexity that weâve achieved in this wine.

The colour is a deep, sanguine, blood red. On the nose is chocolate, liquorice, spice, pepper, apricot and slight menthol. Situated to the south-east of Mallorca, AN Negra winery produces its wines on the old country estate of Son Burguera close to the town of Felanitx. Roast Beef
A deep crimson hue - never black nor purple, always alive; the colour of blood. The bouquet is rather difficult to describe - so much is happening here; violets, rose petals, smoked meats, black cherries, damp earth and musk. Equally as intriguing is the palate with its fresh, crunchy red to black cherries sidling up alongside notes of graphite, Szechuan pepper and tingling fresh acidity seasoned with exotic spices. It finishes powerfully with bitter dark chocolate laced with subtle smoke from the oak. At present, the wine sits delicately balanced on the knife''''s edge. In a few years the briar and undergrowth will emerge and the fruit will build the palate even further.

Pleasant violet dark hue. The nose shows great complexity with blackberries fruits and toasted aromas. The estate takes its name from the lieu-dit of Les PalliĂšres. Most of its vines, and the cellar and residential buildings, have been there for well over a century. Beef Fillet in Brioche, Braised Beef with Carrots
Colour Deep brick red hue. The bouquet is very typical Cabernet Sauvignon fruit aromas. Red currant, mulberry, dark chocolate combine with a background of charry oak, cigar box and spice.The immediate impression is one of full-bodied, mouth-filling red and blue fruit flavours, giving a luxurious feel. Texture is velvety smooth. Length and persistence of the flavours are enhanced by charry oak notes that leave gentle, slightly bituminous tannins on the finish.
This is a very attractive and drinkable vintage and it will certainly provide enjoyable early drinking. However, using the 1976 vintage as our example, we strongly recommend that those who have the opportunity to cellar the wine should do so. It will take at least 10 years to develop some bottle age characters and will probably reach its peak somewhere around 20 years old.

The 2001 Yquem reveals a hint of green in its light gold colour. BBQ red and white meats
This wine has rather a solemn demeanour, both in its deep colour and in its bright, promising appearance. It is a wine full of nuances, ranging from those which mark its complex aroma, with almost candied fruit mingling with traces of dark chocolate and toasted, spicy nuances, to those which unveil as it passes through your mouth: supple, meaty and potent, with elegant, soft, fruity tannins. Long and open in the aftertaste. It is a proud wine with a long, lingering finish.
Issac Muga and his wife, Aurora Cano, brought together two families of traditional wine makers in 1932, and created personalized internationally renowned wines, growing just as rapidly as the demand. The vineyard is still family own and operated. Located on the slopes of the Obarenes Mountains, terraces form small series of vine plots. The soil is clay, but each plot retains significant differences causing great varieties in wine styles. Founded in 1877 this winery is one of the historical wineries in Rioja, even more, it represents history in Rioja. It still is an authentic family winery, where the fourth generation of descendants of Don Rafael Lopez de Heredia is in charge of running the winery. They produce, among other wines, the famous Viña Tondonia, one of the great classical Riojan wines, using the same traditional methods they used 129 years ago. Wild Boar
Crimson colour. Some bright cassis and strawberry on the bouquet, deep set black berry and ripe plum. Sandalwood, cedar and roasted meatss. Retains nice purity which is the core of this vineyard, time in decanter will help the aroma. Overall the palate is a little softer than normal, the tannins will come around just nicely. "Super concentrated and very vibrant, great deep purple colour, liquorice and some sarsaparilla, lots of depth, really ripe and plenty of deep dark berry aromas. The palate has a spike of acid, more liquonce and anise. Deep flowing tannins and plenty of bright, fruit flavour, will reveal impressive complexity!"
Kaesler is a privately owned wine company that produces estate grown wines from vineyards as old as 1893. The Kaesler family were pioneers who settled in the Barossa Valley in the 1840âs. In 1891 they bought a parcel of land and in 1893 planted their first vines. Today Kaesler wines are made from these ancient, dry grown vineyards, by the third owners of this magnificent property. Venison Shanks
Great perfume on the nose, fine well integrated fruit of highly complex red berries and subtle roasted oak. Perfumed but savoury, the essence of pinot noir from our site. Strong colour, rich flavoursome palate showing weight, true length and depth. Silky in its delivery and a joy to drink but there is good underlying material and a balance to age 8-10 years. My style of pinot, gamey and moreish.
The By Farr vineyards have plantings of Pinot Noir, Chardonnay, Shiraz and Viognier (all varieties are a mixture of clones and rootstocks). The aspect of the vineyard is north/northeast and undulating. The soil is volcanic loam over limestone and in some sites the limestone dominates the loam. They are well drained and of low fertility. Peasant Style Veal Kidneys
From 45 year old vines, this 100 percent Tempranillo is the first release from the new project of the Eguren brothers. Aged for 15 months in new French oak, this wine has everything you could hope for from Toro; rich, savoury, dark berries, finishing with spice and dark chocolate.
The Eguren family has been involved in winemaking in Toro since 1870. They continue to use traditional practices instead of modern machinery.
